Chocolate Berry Love Balls

These Chocolate Berry Love Balls are made with cacao and include so many cacao health benefits. Processed chocolate is most often made with dairy and sugar and is not good for you, but these chocolate balls include cacao health benefits and are made with a healthier sweetener of your choice. The sweetness of things like fruits, agave, and honey are the best natural sweeteners of all because they also include other nutritional values. Use raw jam or filling to make these Chocolate Love Balls one of the best raw desserts ever.

Ingredients
  

  • 1 cup Nature’s Eats Walnuts or Almonds
  • ½ cup lightly packed almond pulp (Use the pulp from making Homemade Almond Milk)
  • ½ cup Nature's Eats California Dates, finely chopped
  • 3 tablespoons cacao powder (use more for stronger chocolate flavor)
  • ½ teaspoon vanilla bean extract or powder
  • 1⁄8 cup cacao nibs (optional)

Instructions
 

  • In a food processor grind the walnuts into crumbs. Do not over-process or the walnuts will become too oily.
  • Add in remaining ingredients and process until dough is smooth. Be sure the dates are finely chopped beforehand so that the dough does not become overly processed.
  • Roll 1 tablespoon of dough into a ball. Place on a parchment covered baking sheet. Use your finger to make an indent in the center of each ball.
  • The filling will be Nature's Eats Berry Jam or a jam of your choice. Semi-freeze the jam before filling the balls. Add ½ teaspoon of semi-frozen jam into each indent and close the dough up around it. Be sure each ball is sealed, using extra dough to patch if needed.
  • Re-roll each ball and place in refrigerator or freezer to chill while you prepare the dipping chocolate.
  • Make your melted chocolate by following the recipes found in Nature's Eats Valentine’s Day Chocolate. Using a toothpick dip each ball completely into the melted chocolate and then place on the parchment paper. Once all of the balls are dipped, place them in the refrigerator or freezer and allow them to harden.
  • These chocolate balls are best when stored in the refrigerator in an airtight container.
